Lamb Molls With Apricot Sauce

  Mashed sweet potatoes 1 Cup (16 tbs)
  Dried apricots 1⁄4 Cup (4 tbs), chopped
  Molasses 1 Tablespoon
  Roasted lamb slices 8 (Thin Slices)
  Apricot juice 1 1⁄2 Cup (24 tbs)
  Lemon juice 1 Tablespoon
  Cornstarch 4 Teaspoon
  Salt 1⁄2 Teaspoon
  Ginger 1 Pinch
  Golden raisins 1⁄2 Cup (8 tbs)
  Butter/Margarine 2 Tablespoon

Preheat oven to 350 °F (175 °C).
In a small bowl, combine stuffing ingredients.
Divide stuffing among lamb slices.
Secure with a wooden toothpick.
Transfer lamb rolls to a cookie sheet.
Cook in oven 15 minutes.
Meanwhile, in a saucepan, blend sauce ingredients.
Over low heat, while stirring, cook until sauce thickens.
Add raisins and butter.
Stir until butter melts.
Pour apricot sauce over lamb rolls.
