This Mackerel Mediterranean is simply awesome ! I've never known tastier seafood than this ! Just try this Mackerel Mediterranean with rice or pasta for your next meal and let me know if you like it !
Ingredients
  Mackerel 4 , filleted (Unskinned)
  Onions 2 Medium, sliced thin
  Tomatoes 3 Cup (48 tbs), chopped coarsely and drained
  Coriander 1⁄2 Teaspoon, ground
  Fennel 1⁄2 Teaspoon, ground
  Basil 1⁄2 Teaspoon
  Oregano 1⁄2 Teaspoon
  Garlic 1 Clove (5 gm), minced
  Salt 1⁄2 Teaspoon
  Pepper To Taste
  Olive oil 1 1⁄2 Tablespoon
Directions

Wash mackerel.
In casserole or baking pan, layer mackerel fillets, skin side up, with onions in between.
Combine remaining ingredients.
Pour over mackerel.
Bake, uncovered, in preheated oven for 45 minutes to an hour, until onions are cooked and fish is tender.
