|Mackerel||4 , filleted (Unskinned)|
|Onions||2 Medium, sliced thin|
|Tomatoes||3 Cup (48 tbs), chopped coarsely and drained|
|Coriander||1⁄2 Teaspoon, ground|
|Fennel||1⁄2 Teaspoon, ground|
|Garlic||1 Clove (5 gm), minced|
|Olive oil||1 1⁄2 Tablespoon|
In casserole or baking pan, layer mackerel fillets, skin side up, with onions in between.
Combine remaining ingredients.
Pour over mackerel.
Bake, uncovered, in preheated oven for 45 minutes to an hour, until onions are cooked and fish is tender.
