Chicken Saute Mediterranean
|Boneless, skinless, chicken breasts||1 1⁄4 Pound (1 Pack, Perdue Fit 'N Easy Brand)|
|Dried herbs de provence/Italian herb seasoning||1 1⁄2 Teaspoon|
|Olive oil||2 Teaspoon|
|Garlic||2 Clove (10 gm), minced|
|Sun dried tomatoes||1 1⁄2 Tablespoon, chopped|
|Canned whole tomatoes||8 Ounce, undrained (1 Can)|
|Canned great northern beans||16 Ounce, drained and rinsed (1 Can)|
|Ground black pepper||To Taste|
Sprinkle breast halves lighdy with salt and generously with pepper; press herbs into chicken.
In large nonstick skillet over medium-high heat, heat oil.
Add chicken and brown 2 minutes on each side.
Add garlic and sun-dried tomatoes; cook and stir 1 minute.
Stir in canned tomatoes, including liquid, and beans.
Reduce heat to medium-low; cover partially and simmer 15 to 20 minutes until chicken is cooked through.
