Meat Loaf With Red Bell Peppers

  Garlic 2 Clove (10 gm), crushed
  Onions 2 , finely chopped
  Smoked bacon 1⁄4 Pound, rind removed and diced (Streaky Bacon)
  Red bell peppers 2 , rinsed, seeded and diced
  Eggs 3
  Ground beef 1 1⁄4 Pound (Minced Beef)
  Breadcrumbs 5 Tablespoon
  Concentrated tomato juice 1⁄4 Cup (4 tbs)
  Allspice 1⁄2 Teaspoon
  Dried mixed herbs 1⁄2 Teaspoon
  Pine kernels 3 Tablespoon
  Golden raisins 2 Ounce (Sultanas)
  Sugar 1⁄2 Teaspoon
  Salt To Taste
  Pepper To Taste
  Butter 1⁄4 Teaspoon

Puree the garlic, onions and bacon in a food processor.
Put the puree into a casserole.
Cover and microwave on HIGH for 2 minutes.
Add the peppers to the onions and bacon.
Cover and micro wave on HIGH for 6 minutes.
Break the eggs into a bowl and whisk thoroughly with a balloon whisk.
Put the ground (minced) beef into a large bowl.
Add the breadcrumbs, tomato juice, allspice, mixed herbs, pine kernels, raisins (sultanas) and sugar.
Season with salt and pepper and mix well.
Add the beaten eggs and the vegetable puree to the meat mixture.
Stir very thoroughly.
Butter the base of a 1 1/2 quart (1.5 litre /2 3/4 pint) pyrex cake mold (mould) and pour in the mixture.
Press down with a spatula to eliminate air pockets.
Cover and microwave on HIGH for 13 minutes.
Leave the meat loaf to stand for at least 5 minutes.
