Herbed Veal Loaf
|Ground veal||2 Pound|
|Bread crumbs||1⁄2 Cup (8 tbs)|
|Chopped parsley||3⁄4 Cup (12 tbs)|
|Chopped chives||1⁄4 Cup (4 tbs)|
|Basil/One tablespoon dried basil||2 Tablespoon, chopped|
|Green pepper||1⁄4 Cup (4 tbs), chopped|
|Salt||1 1⁄2 Teaspoon|
|Ground black pepper||1⁄2 Teaspoon|
|Bacon slices||1 Cup (16 tbs)|
Preheat the oven to 350 degrees.
In a mixing bowl combine all the ingredients except the bacon slices.
Using the hands, blend well; do not overwork the meat or it will produce a meat loaf that is too tightly packed.
Line a nine inch pie plate with aluminum foil and shape the meat mixture into an oval loaf.
Place the loaf on the foil and cover with bacon slices.
Bake one and one half hours.
