Taco Meat Loaf's picture
I made this Taco Meat Loaf last weekend when I had some unexpected guests-visit; believe me, it was dead simple and was a great hit too. In fact, the blend of beef, and cheese gives out a delightful combination, which is sure to make a bland meal go ravishing and unforgettable!
  Ground beef 2 Pound
Onion soup mix 1 1⁄4 Ounce (1 Envelope)
  Egg 1
Taco sauce 8 Ounce (1 Jar)
Tortilla chips 8 Ounce (1 Package)
  Shaved ham 8 Ounce
Shredded monterey jack cheese 8 Ounce (1 Package)
Shredded cheddar cheese 8 Ounce (1 Package)
  Salt To Taste
  Pepper To Taste

Combine the ground beef, onion soup mix, egg, 1/4 cup of the taco sauce, salt, pepper and a few crumbled tortilla chips in a bowl and mix well.
Spread half the ground beef mixture in the bottom of a loaf pan.
Layer the shaved ham, 1/4 cup of the Monterey Jack cheese, 1/4 cup of the Cheddar cheese and about 1/4 cup of the taco sauce over the ground beef layer.
Spread the remaining ground beef mixture over the taco sauce layer.
Press to make a loaf.
Top with the remaining taco sauce and cheeses.
Bake at 350 degrees for 30 to 40 minutes or until brown.
