|Ground beef||2 Pound|
|Onion soup mix||1 Cup (16 tbs)|
|Garlic powder||1⁄2 Teaspoon|
|Saltine cracker crumbs||20 , crumbled|
|Liquid smoke||1 Tablespoon|
|Cheddar cheese||1⁄4 Cup (4 tbs), shredded|
Place all ingredients except potatoes and cheese in mixing bowl and mix well.
Place meat mixture in an 8" or 9" jello ring mold and put in freezer for 15 minutes (until mixture has set).
Remove from freezer and tip meatloaf onto cookie pan (with edge) and bake at 350 degrees for 45 minutes.
Meanwhile peel, cube and boil potatoes until done.
Remove meatloaf ring from oven; drain off excess fat and place on serving platter.
Mash potatoes and place in center of ring; sprinkle cheese on top of potatoes.
Return to oven until cheese is melted.
