Meatloaf Ring

Meatloaf Ring is an irresistible side dish which you would surely love to serve to your friends. Enjoy this delicious recipe of flavored beef, soup mix and cheese; I am sure you would love to try this Meatloaf Ring again-n-again.
  Ground beef 2 Pound
  Onion soup mix 1 Cup (16 tbs)
  Garlic powder 1⁄2 Teaspoon
  Salt 1⁄4 Teaspoon
  Pepper 1⁄8 Teaspoon
  Saltine cracker crumbs 20 , crumbled
  Eggs 2
  Liquid smoke 1 Tablespoon
  Potatoes 6 Medium
  Cheddar cheese 1⁄4 Cup (4 tbs), shredded

Place all ingredients except potatoes and cheese in mixing bowl and mix well.
Place meat mixture in an 8" or 9" jello ring mold and put in freezer for 15 minutes (until mixture has set).
Remove from freezer and tip meatloaf onto cookie pan (with edge) and bake at 350 degrees for 45 minutes.
Meanwhile peel, cube and boil potatoes until done.
Shred cheese.
Remove meatloaf ring from oven; drain off excess fat and place on serving platter.
Mash potatoes and place in center of ring; sprinkle cheese on top of potatoes.
Return to oven until cheese is melted.
Serve immediately.
