Meat Loaf Potato Roll Up

  Eggs 2 , beaten
  Tomato sauce 8 Ounce
  Finely crushed saltine crackers 1⁄2 Cup (8 tbs)
  Finely chopped onion 1⁄4 Cup (4 tbs)
  Chopped green pepper 2 Tablespoon
  Salt 3⁄4 Teaspoon
  Ground beef 1 1⁄2 Pound
  Instant mashed potatoes 3 1⁄2 Ounce (Packaged, Enough For 4 Servings)
  Snipped parsley 2 Tablespoon
  Dried thyme 1⁄4 Teaspoon, crushed
  Dried marjoram 1⁄8 Teaspoon, crushed

In bowl combine eggs and 1/3 cup of the tomato sauce.
Stir in cracker crumbs, onion, green pepper, and salt.
Add ground beef; mix well.
On foil or waxed paper pat meat mixture into a 10-inch square; set aside.
Prepare packaged instant mashed potatoes according to package directions except omit butter.
Stir parsley, thyme, and marjoram into potatoes.
Spoon potato mixture across center of meat.
Using foil to lift, fold sides of meat over potatoes; seal seam and ends.
Place, seam side down, in shallow baking pan.
Bake in 350° oven about 45 minutes.
Spoon remaining tomato sauce over loaf.
