Meat Loaf With Cheese Stuffing
|Ground beef||3 Pound|
|Soft bread crumbs||3 Cup (48 tbs)|
|Minced onions||1 Cup (16 tbs)|
|Minced green pepper||1⁄2 Cup (8 tbs)|
|Prepared mustard||2 Tablespoon|
|Evaporated milk||1⁄4 Cup (4 tbs)|
|Catsup||1⁄4 Cup (4 tbs)|
|Sharp cheese slices||16 Ounce|
|Minced parsley||To Taste|
Preheat oven to 400 degrees.
Mix ground beef, crumbs, onions and green pepper lightly into eggs.
Add remaining ingredients except cheese and pars- ley; mix lightly.
Divide mixture into three parts; pat 1 part into large loaf pan.
Cover with overlapping cheese slices.
Spread with second part of ground beef mixture.
Add layer of cheese slices.
Spread with re- maining ground beef mixture.
Invert loaf onto jelly roll pan.
Bake for 45 minutes.
Crumble 2 cheese slices over top.
Bake for 5 minutes longer.
Cool for 15 minutes before serving.
Garnish with parsley.
