Country Meat Loaf
|Onions||2 Medium, minced|
|Ground beef chuck||1 1⁄2 Pound|
|Egg||1 , beaten|
|Cheddar cheese||1 Cup (16 tbs), cubed|
|Tomato soup||1 Can (10 oz)|
"Trim crusts from bread slices.
Soften bread in small amount of water.
Saute onions in butter lightly.
Combine beef, bread, onions, salt, pepper, egg and mustard; mix well.
Shape half the beef mixture into flat loaf; top with cheese.
Shape remaining beef mix- ture into flat loaf; place over cheese.
Mold loaf; seal edges.
Place in baking dish; pour soup over loaf.
Bake, covered, at 350 degrees for 1 hour.
Bake, un- covered, for 15 to 20 minutes longer or until browned."
