Ring Meat Loaf With Tomato Cheese Topping

Ingredients
  Bacon slices 6
  Onion 1⁄2 Cup (8 tbs), finely chopped
  Canned tomato soup 10 3⁄4 Ounce (1 Can)
  Ground beef 1 1⁄2 Pound
  Fine dry breadcrumbs/1 cup cooked rice 1⁄2 Cup (8 tbs)
  Parsley 1⁄4 Cup (4 tbs), finely chopped
  Egg 1 , slightly beaten
  Pepper 1⁄8 Teaspoon
  Processed cheese slice 2 , cut diagonally
Directions

MAKING
1) Into a skillet, fry the bacon till crispy
2) Crumble the bacon
3) Into the bacon drippings, sauté the onion till soft
4) Stir in 1/2 can soup, beef, bread crumbs, parsley, egg, crumbled bacon and pepper
5) Into a shallow baking dish, shape the mixture into a ring (4 inch opening)
6) Pour the soup atop the ring and sprinkle in some grated cheese
7) Bake the meat ring till the cheese is all melted
8) Remove the ring onto a flat dish using two spatulas
SERVING
9) Cut the ring into 1 inch thick slices and serve hot
