Liver Meat Loaf

Ingredients
Potatoes - 8 oz [250 g], sieved or riced
Liver - 1 lb [500 g]
Pork sausage meat - 1 lb [500 g]
Butter or oil - 2 oz [150 g]
Onion - 2 oz [50 g], finely chopped
Celery - 2 oz [50 g], finely chopped
Egg -1, beaten
Tomato juice - 1/4 pint [125 ml]
Salt and pepper
Directions

GETTING READY
1) Take a loaf tin and grease ot well.

MAKING
2) In a skillet, heat the fat and brown the liver.
3) Remove liver from the pan and mince.
4) Add the celery and onion to the fat and cook for 2-3 minutes.
5) In a large bowl, combine all the ingredients together and using sufficient tomato juice make a moist texture.
6) In the greased loaf tin press the mixture and bake at 350°F (180°C), Gas Mark 4, for 1 1/2-2 hours.

SERVING
7) Serve the loaf hot with onion sauce, or cold with salad.
