Beef And Pork Meat Loaf
|Ground veal||3⁄4 Pound|
|Ground pork||3⁄4 Pound|
|Mushrooms||1 Cup (16 tbs), chopped|
|Fresh bread crumbs||1⁄4 Cup (4 tbs), soaked in white wine|
|White wine||1⁄2 Cup (8 tbs)|
|Egg||1 , beaten|
|Garlic||1 Clove (5 gm), crushed|
|Sour cream||1 Cup (16 tbs)|
|Hard boiled eggs||2 , peeled|
|Bouillon||1 Cup (16 tbs)|
Have meat ground twice through meat chopper.
Mix meats with mushrooms, bread crumbs that have been soaked in white wine, beaten egg, salt, pepper, garlic, a good pinch of nutmeg and 4 tablespoons sour cream.
When well mixed, form into loaf, molded around the hard-boiled eggs.
Put remaining sour cream over meat loaf so that top and sides are well covered.
Bake in preheated 4000 oven 3/4 hour, basting frequently.
Remove meat loaf.
Then add 1 cup boiling bouillon to bottom of dish and scrape whatever may be adhering to bottom and sides to use as a sauce.
