Veal And Pork Meat Loaf
|Veal||3⁄4 Pound, finely ground|
|Lean pork||3⁄4 Pound, finely ground|
|Mushrooms||1 Cup (16 tbs), chopped|
|Fresh bread crumbs||1⁄4 Cup (4 tbs)|
|White wine||1⁄2 Cup (8 tbs)|
|Garlic||1 Clove (5 gm), crushed|
|Eggs||2 , hard boiled and peeled|
|Eggs||2 , hard-boiled and peeled|
|Sour cream||8 Tablespoon|
|Boiling broth||1 1⁄2 Cup (24 tbs)|
Mix meats with mushrooms and bread crumbs soaked in white wine and egg.
Add salt, pepper, garlic clove, a good pinch of nutmeg and 2 tablespoons sour cream.
Shape into oblong loaf, molded around the hard-boiled eggs.
Spoon 4 tablespoons sour cream over meat loaf.
Bake in preheated 400 ° oven 3/4 hour, basting frequently.
If necessary, add more sour cream.
Add broth to bottom of pan and scrape drippings from bottom and sides.
Pour over loaf.
