Meat Loaf Roll

Ingredients
  Ground beef 1 1⁄2 Pound
  Oatmeal 1⁄4 Cup (4 tbs)
  Eggs 2
  Thyme 1⁄2 Teaspoon
  Salt 1 Teaspoon
  Onion 1 Medium, finely chopped
  Chopped green pepper 1 Cup (16 tbs)
  Chopped pimento 1⁄4 Cup (4 tbs)
  Grated cheddar cheese 1 Cup (16 tbs)
Directions

Mix ingredients well.
On waxed paper pat into a rectangle 1/2 inch thick.
Spread filling over meat, leaving 1 inch border on all sides.
Roll up jelly-roll fashion by starting on short side.
Press edges together to seal.
Place in baking dish, seam side down.
Microwave at 100% power (HIGH) for 5 minutes.
Reduce power to 50% (MEDIUM).
Cook 10 minutes.
Drain fat and shield ends with foil.
Turn dish.
Cook 5-10 minutes more until internal temperature is 145°F.
