Manila Meat Loaf

Ingredients
  Chopped beef 1 Pound
  Meat extract 2 Teaspoon
  Monosodium glutamate 1 Teaspoon
  Soft bread crumbs 1 Cup (16 tbs)
  Pork shoulder 1⁄2 Pound, ground
  Ham shoulder 1⁄2 Pound, ground
  Grated swiss cheese 1⁄4 Cup (4 tbs)
  Chopped ripe olives 2 Tablespoon
  Sweet pickles 2 Tablespoon
  Egg 1
  Hard-cooked eggs 3 , shelled
  Canned tomato sauce 1⁄2 Cup (8 tbs)
  Soy sauce 1 Teaspoon
  Fresh lemon juice 2 Teaspoon
  Onion 1 , sliced
  Sugar 1 Pinch
  Salt To Taste
  Pepper To Taste
  Cayenne To Taste
Directions

Mix together beef, meat extract, 1/2 teaspoon monosodium glutamate, and bread crumbs.
For the filling, toss together ham and pork, cheese, olives, pickles, raw egg, a pinch of monosodium glutamate, and salt, pepper, and cayenne to taste.
Oil a loaf pan well.
Make a layer of half of beef mixture, then cover with half of ham filling.
Press hard-cooked eggs halfway into meat, then cover with the balance of ham and, finally, the rest of beef.
Tap the pan smartly a few times, then invert over a greased shallow baking pan and turn out loaf.
Combine tomato sauce with soy sauce and lemon juice.
Pour into baking dish and add onion sliced into rings, pinch of sugar, and salt and pepper to taste.
Bake in preheated
