Basic Meat Loaf

Ingredients
  Lean ground beef 2 Pound
  Salt 2 Teaspoon
  Pepper 1⁄4 Teaspoon
  Eggs 2
  Soft bread crumbs 1⁄2 Cup (8 tbs)
  Milk/Other liquid 1⁄2 Cup (8 tbs)
  Chopped onion 1⁄2 Cup (8 tbs)
  Fresh chopped herbs/1/4 teaspoon dried herbs - basil, marjoram, rosemary, sage, savory 1 Teaspoon
Directions

Mix all ingredients except bacon thoroughly, using hands or a heavy-duty electric mixer.
If you prefer to use a spoon, beat eggs slightly before adding.
Pack into a lightly greased loaf pan (9x5x3 inches), or form into a loaf on a cookie sheet, top with bacon, and bake in preheated moderate oven (350°F.) for 1 hour, or until the loaf shrinks slightly from the sides of the pan.
If you have not covered the top with bacon, it is a good idea to baste it occasionally with equal amounts of melted butter and wine, water, or stock.
Serve with a sauce such as mushroom, tomato, or sour cream, or serve plain.
Makes 6 to 8 servings.
