Beef Loaf With Wine
|Lean ground beef||2 Pound|
|Soft bread crumbs||1⁄2 Cup (8 tbs)|
|Chopped onion||1⁄2 Cup (8 tbs)|
|Garlic||1 Clove (5 gm), pureed|
|Fresh tarragon/1/2 teaspoon dried tarragon / basil||2 Teaspoon, crushed|
|Melted butter||1⁄4 Cup (4 tbs)|
|Red wine||3⁄4 Cup (12 tbs)|
Mix first 8 ingredients together with 1/4 cup wine.
Pack into a loaf pan lined with wax paper and chill.
Turn out on a cookie sheet and score top with the back of a knife.
Mix together melted butter and 1/2 cup wine.
Bake loaf in preheated moderate oven (350°F.) for 1 hour, basting occasionally with butter-wine mixture.
Good with mushroom sauce or sour cream.
Makes 6 to 8 servings.
