Heavenly Ham Loaf
|Lean ground ham||1⁄4 Pound|
|Lean ground veal||1⁄2 Pound|
|Lean ground pork||1⁄4 Pound|
|Bread crumbs||3⁄4 Cup (12 tbs)|
|Milk||3⁄4 Cup (12 tbs)|
|Finely chopped onion||2 Tablespoon|
|Firmly packed brown sugar||1⁄4 Cup (4 tbs)|
|Prepared mustard||1 Tablespoon|
|Pineapple juice||1⁄3 Cup (5.33 tbs)|
Break eggs into large mixing bowl.
Beat lightly with fork.
Add ham, veal and pork.
Mix to combine meats.
Add bread crumbs, milk, onion, and pepper.
Spread in (9 x 5-inch) loaf dish.
Mix sugar and mustard together.
Spread on top of loaf.
Pour pineapple juice over all.
Cover with waxed paper.
MICROWAVE 5 MINUTES on HIGH.
MICROWAVE 15 MINUTES on '6', until firm, or meat thermometer registers 160°.
Let stand 5 minutes uncovered.
Garnish with parsley, if desired.
