Homemade Mini Turkey Meatloaf

In my mind, I always think of March as the beginning of spring, but in reality it's more like the end of winter. After all, you know what they say, "March comes in like a lion and out like a lamb." So with that being said, I decided to make some cold weather comfort food...good old American meatloaf. The only difference is, I make them into mini's so you can get them on the table in half the time.
Ingredients
  Ground turkey 1 Pound (0.5 Light Meat And 0.5 Dark)
  Onion/2 small onions 1 Large, chopped
  Minced cremini mushrooms 1 Cup (16 tbs)
  Parsley 1⁄2 Cup (8 tbs), chopped
  Salsa 1 Cup (16 tbs)
  Tomato sauce 1⁄2 Cup (8 tbs)
  Rolled oats 3⁄4 Cup (12 tbs)
  Egg 1
  Garlic powder 2 Teaspoon
  Dried thyme 1 Teaspoon
  Salt To Taste
  Parsley 1 Tablespoon, chopped (For Garnish)
Directions

Preheat oven to 375.

1. Combine all ingredients, except tomato sauce in a large bowl.

2. Free form 4 mini meatloaves and place on a baking sheet. Top each one with 2 tbsp of tomato sauce.

3. Bake for 30 minutes.
4. Remove from oven and plate it.
5. Garnish it with chopped parsley and serve it with sauteed vegetables.
