Meat Loaf With Vegetables
|Ground beef||2 Pound|
|Chopped onion||1⁄4 Cup (4 tbs)|
|Breadcrumbs||1⁄2 Cup (8 tbs)|
|Eggs||2 , well beaten|
|Tomato sauce||1 Can (10 oz)|
|Carrots||3 , sliced|
|Potatoes||5 , sliced|
|Chopped celery||1⁄2 Cup (8 tbs)|
|Tomato soup||1 Can (10 oz)|
Combine the beef, chopped onion, bread crumbs, eggs, salt, pepper and tomato sauce in a bowl, then shape into loaves.
Brown in a skillet in small amount of fat.
Slice the small onions and separate into rings.
Place over meat loaves.
Add the carrots, potatoes, celery and tomato soup and simmer for 1 hour.
