Apricot Meat Loaf
|Ground beef||2 Pound|
|Chopped dried apricots||1 Cup (16 tbs)|
|Dry bread crumbs||1⁄2 Cup (8 tbs)|
|Chopped parsley||2 Tablespoon|
|Salt||1 1⁄2 Teaspoon|
|Brown sugar||1⁄2 Cup (8 tbs)|
Combine all ingredients except the brown sugar and water and shape into a loaf.
Place in a greased shallow pan.
Bake at 350 degrees for 1 hour.
Mix the brown sugar with water in a saucepan and heat until sugar is melted.
Spread over meat loaf and bake for 5 to 10 minutes longer.
