Something Special Meat Loaf
|Fresh mushrooms||3⁄4 Pound, divided|
|Ground chuck||1 1⁄2 Pound|
|Soft bread crumbs||1⁄2 Cup (8 tbs)|
|Catsup||1⁄2 Cup (8 tbs)|
|Eggs||2 , lightly beaten|
|Salt||1 1⁄2 Teaspoon|
Wipe mushrooms with a damp paper towel and trim stem ends.
Reserve 10 whole mushrooms.
Finely chop remaining mushrooms.
Place in a large bowl and stir in ground beef, crumbs, catsup, eggs, salt, and pepper.
Shape half the meat mixture into an oval about 1-inch thick in a flat baking dish.
Press 5 of the reserved mushrooms down in the center of the meat.
Cover with remaining meat and pat into an oval shape.
Cover with waxed paper.
Microwave at HIGH 7 minutes.
Rotate dish 1/4 turn.
Microwave at HIGH 6 to 8 minutes.
Let stand, covered, while preparing Topping.
Slice remaining mushrooms.
Place in a 2-cup glass measure with butter.
Microwave at HIGH 1 to 2 minutes.
To serve, place meat loaf on serving platter.
Spoon Topping over meat loaf and garnish with mushroom slices that have been cooked in butter.
