French Country Meatloaf

Ingredients
  Lean ground beef 2 Pound
  Ground veal 1 Pound
  Ground pork 1 Pound
  Onion 1 Large, coarsely chopped
  Chopped fresh parsley 1 Cup (16 tbs)
  Green onions 8 , finely chopped
  Chopped fresh basil 1⁄4 Cup (4 tbs)
  Dijon mustard 2 Teaspoon
  Salt 2 Teaspoon
  Freshly ground black pepper 1 Teaspoon
  Hot pepper sauce 1⁄2 Teaspoon
  Eggs 3 , well beaten
  Fresh breadcrumbs 3⁄4 Cup (12 tbs)
  Light cream 1⁄2 Cup (8 tbs)
  Bacon slices 12
Directions

1. Preheat oven to 350°F (160°C).
2. In a large bowl, combine beef, veal, pork, onion, parsley, green onions, basil, mustard, salt, pepper and hot pepper sauce.
3. Combine eggs, breadcrumbs and cream; stir into mixture.
4. Lay six bacon slices side by side in a 9x 13-inch (23x33-cm) baking pan. Place meat mixture on top of bacon. With hands shape into a loaf. Lay remaining bacon slices on top of loaf. Bake in oven, basting frequently with pan juices, 1 1/2 to 2 hours, until meat is no longer pink.
5. Cool for 30 minutes.
6. Slice and serve.
