Chipotle Meat Loaf

  White bread slice 1⁄2 Ounce (1/2 Of 1 Ounce)
  Uncooked regular oats 1⁄2 Cup (8 tbs)
  Chopped onion 2 Cup (32 tbs)
  Ketchup 1⁄2 Cup (8 tbs), divided
  Salt 1 Teaspoon
  Dried oregano 2 Teaspoon
  Ground cumin 1 1⁄2 Teaspoon
  Ground coriander 1 1⁄2 Teaspoon
  Ground red pepper 1⁄2 Teaspoon
  Garlic 2 Clove (10 gm), minced
  Egg 1 Large, lightly beaten
  Extra lean ground beef 1 1⁄4 Pound
  Ground turkey breast 1⁄2 Pound
  Cooking spray 1
  Minced chipotle pepper in adobo sauce 2 Teaspoon

1. Preheat oven to 425°.
2. Place bread in a food processor; pulse 5 times or until coarse crumbs measure 1/4 cup. Combine breadcrumbs and oats; set aside.
3. Combine onion, 1/4 cup ketchup, salt, and next 6 ingredients in a bowl; crumble beef and turkey over onion mixture. Add breadcrumb mixture, and stir until blended.
4. Press mixture into a 9 x 5-inch loaf pan coated with cooking spray. Combine 1/4 cup ketchup and chipotle pepper; spread over top of loaf. Bake at 425° for 45 minutes or until a thermometer inserted in center of loaf registers 160°. Let stand 5 minutes before slicing.
