Chipotle Meat Loaf
|White bread slice||1⁄2 Ounce (1/2 Of 1 Ounce)|
|Uncooked regular oats||1⁄2 Cup (8 tbs)|
|Chopped onion||2 Cup (32 tbs)|
|Ketchup||1⁄2 Cup (8 tbs), divided|
|Dried oregano||2 Teaspoon|
|Ground cumin||1 1⁄2 Teaspoon|
|Ground coriander||1 1⁄2 Teaspoon|
|Ground red pepper||1⁄2 Teaspoon|
|Garlic||2 Clove (10 gm), minced|
|Egg||1 Large, lightly beaten|
|Extra lean ground beef||1 1⁄4 Pound|
|Ground turkey breast||1⁄2 Pound|
|Minced chipotle pepper in adobo sauce||2 Teaspoon|
1. Preheat oven to 425°.
2. Place bread in a food processor; pulse 5 times or until coarse crumbs measure 1/4 cup. Combine breadcrumbs and oats; set aside.
3. Combine onion, 1/4 cup ketchup, salt, and next 6 ingredients in a bowl; crumble beef and turkey over onion mixture. Add breadcrumb mixture, and stir until blended.
4. Press mixture into a 9 x 5-inch loaf pan coated with cooking spray. Combine 1/4 cup ketchup and chipotle pepper; spread over top of loaf. Bake at 425° for 45 minutes or until a thermometer inserted in center of loaf registers 160°. Let stand 5 minutes before slicing.
