Blue Ribbon Meat Loaf
|Cooked rice||2 Cup (32 tbs)|
|Carrot||1 Large, shredded|
|Onion||1 Large, finely chopped|
|Celery stalks||2 , finely chopped|
|Lean ground beef||1 Pound|
|Eggs||2 , beaten|
|Skim milk||1⁄4 Cup (4 tbs)|
|Tamari/Soy sauce||2 Tablespoon|
|Tomato paste||2⁄3 Cup (10.67 tbs)|
In a large mixing bowl, combine the rice, carrots, onions, celery, beef, eggs, milk, tamari, basil, thyme, and marjoram.
Stir in 1/2 cup of the tomato paste.
Pack the meatloaf in a 2-quart ovenproof casserole.
Mix the remaining tomato paste with the water and spread over the loaf.
Bake at 350° for about 1 hour.
