Mini Meat Loaves

These mini meatloaves are beef and pork meatloaves made with barbecue flavor to it. Combined with dry breadcrumbs, the mini meatloaves are baked with a cheese strips topping and are great for single servings!
Ingredients
  Onion soup mix 2 1⁄4 Ounce (1 Pouch)
  Ground beef 1 1⁄2 Pound
  Bulk pork sausage 1⁄2 Pound
  Fine dry bread crumbs 1⁄2 Cup (8 tbs)
  Egg 1
  Original barbeque sauce 1⁄2 Cup (8 tbs) (Original Flavor)
  Sweet pickles 3 Small, halved lengthwise
  Cheddar cheese 2 Ounce, cut into strips
Directions

1. Preheat oven to 350°F. In large bowl, combine soup mix, beef, sausage, bread crumbs, egg and 1/4 cup of the barbecue sauce; mix well.
2. Divide meat mixture into 6 equal portions. Flatten each to a 4-inch patty. Place a pickle half on each; fold meat over to enclose pickle.
Shape each into a small loaf. Place loaves in large shallow baking pan.
3. Bake 30 minutes. Remove from oven; spoon fat from pan. Spread remaining 1/4 cup barbecue sauce over loaves; top with cheese strips. Bake 2 minutes more or until cheese melts.
