Mini Meat Loaves
|Onion soup mix||2 1⁄4 Ounce (1 Pouch)|
|Ground beef||1 1⁄2 Pound|
|Bulk pork sausage||1⁄2 Pound|
|Fine dry bread crumbs||1⁄2 Cup (8 tbs)|
|Original barbeque sauce||1⁄2 Cup (8 tbs) (Original Flavor)|
|Sweet pickles||3 Small, halved lengthwise|
|Cheddar cheese||2 Ounce, cut into strips|
1. Preheat oven to 350°F. In large bowl, combine soup mix, beef, sausage, bread crumbs, egg and 1/4 cup of the barbecue sauce; mix well.
2. Divide meat mixture into 6 equal portions. Flatten each to a 4-inch patty. Place a pickle half on each; fold meat over to enclose pickle.
Shape each into a small loaf. Place loaves in large shallow baking pan.
3. Bake 30 minutes. Remove from oven; spoon fat from pan. Spread remaining 1/4 cup barbecue sauce over loaves; top with cheese strips. Bake 2 minutes more or until cheese melts.
