Cajun Meatloaf Grilling

Here is my version of a Cajun meatloaf! Packed with lots of flavor and opportunity to add even more. If you like your meatloaf with a bunch of heat, pour it on! The hot tomato ketchup ads a nice touch to this recipe and if you cook it just right, it will start to caramels on the top of your meatloaf yum!

Ingredients

Salt 1 1/4 Teaspoon
Bay leaf 2
Black pepper 1/2 Teaspoon
White pepper 1/2 Teaspoon
Cayenne 1/2 Teaspoon
Cumin 1/2 Teaspoon
Nutmeg 1/2 Teaspoon
Green onions 2 , sliced
Onion 1 Medium , chopped
Green pepper 1/2 Medium , chopped
Garlic cloves 2 , minced
Butter 3 Tablespoon
Worcestershire sauce 2 1/2 Teaspoon
Hot pepper sauce 1 1/2 Teaspoon
Evaporated milk 3 Ounce
Ketchup 3 Ounce
Bread crumbs 1 Cup (16 tbs)
Eggs 2
Ground beef 1 1/2 Pound
Ground pork 1/2 Pound

Directions

GETTING READY

1. Preheat the grill to 350 degrees F.

2. Grease a loaf pan with cooking spray.

MAKING

3. In a bowl, combine salt, bay leaf, black pepper, white pepper, cayenne, cumin and nutmeg set aside.

4. In a skillet, melt the butter and saute onion, green pepper and garlic in it until tender.

5. Add in the Worcestershire sauce, hot pepper sauce, and reserved seasonings. Cook stirring for about 8 to 10 minutes.

6. Remove the bay leaf and discard. Remove the skillet from the heat and pour in the milk and ketchup. Allow the mixture to cool.

7. In a large bowl, combine beef, pork, eggs and bread crumbs. Put the vegetable mixture in it and stir to combine well.

8. Transfer the mixture into the prepared loaf pan and shape into a meatloaf.

9. In a small bowl, combine ketchup and crystal hot sauce. Stir to blend. Spread this mixture evenly on the meatloaf.

10. Place the meatloaf in the grill for about one and a half hour or until a thermometer reads 165 degrees F.

SERVING

11. Slice and serve.
