Meatballs With Breadfruit

Meatballs with breadfruit is a cooked and fried preparation that can be made with any meat of choice. combined together withmashed potatoes and breadfruit, the meatballs are coated with ground peanuts. Fried and served with tomato sauce creole, I love to serve these versatile meatballs over noodles and rice.
Ingredients
  Breadfruit 1 Pound (1 Unit)
  Garlic 1 Clove (5 gm)
  Lime juice 1 Teaspoon
  Chopped chives 1 Tablespoon
  Parsley sprigs 2
  Eggs 3
  Cooked ground meat 1 Cup (16 tbs)
  Finely ground peanuts 1⁄2 Cup (8 tbs)
  Oil 2 Cup (32 tbs) (For Frying, Heated To 365° F)
  Creole tomato sauce 1 Tablespoon
Directions

Peel breadfruit.
Boil about 20 minutes in salted water, or until soft; drain.
Mash as for potatoes.
In a mortar, pound to a paste the garlic, lime juice, chives, and parsley.
Combine paste with mashed breadfruit, 2 eggs, and cooked ground meat; beat until fluffy.
Roll into walnut size balls; coat with beaten egg and then peanuts.
Fry in heated fat until golden.
Drain on absorbent paper, serve hot with the sauce as a dip.
Note: Breadfruit may also be combined with ham, poultry, game, salt cod, or salt herring.
