Meatballs With Breadfruit
|Breadfruit||1 Pound (1 Unit)|
|Garlic||1 Clove (5 gm)|
|Lime juice||1 Teaspoon|
|Chopped chives||1 Tablespoon|
|Cooked ground meat||1 Cup (16 tbs)|
|Finely ground peanuts||1⁄2 Cup (8 tbs)|
|Oil||2 Cup (32 tbs) (For Frying, Heated To 365Â° F)|
|Creole tomato sauce||1 Tablespoon|
Boil about 20 minutes in salted water, or until soft; drain.
Mash as for potatoes.
In a mortar, pound to a paste the garlic, lime juice, chives, and parsley.
Combine paste with mashed breadfruit, 2 eggs, and cooked ground meat; beat until fluffy.
Roll into walnut size balls; coat with beaten egg and then peanuts.
Fry in heated fat until golden.
Drain on absorbent paper, serve hot with the sauce as a dip.
Note: Breadfruit may also be combined with ham, poultry, game, salt cod, or salt herring.
