Chicken And Meatballs
|Chopped celery||1 Cup (16 tbs)|
|Onions||2 Medium, chopped|
|Green pepper||1 , chopped|
|Ground beef/Veal||1 Pound|
|Onion||1 , minced|
|Frying chicken||1 , cut into serving pieces|
|Water||2 Cup (32 tbs)|
|Garlic salt||To Taste|
Saute celery, 2 chopped onions, and green pepper in margarine in a large skillet.
Mix ground meat with minced onion and seasonings to taste.
Form into meatballs.
Season chicken pieces liberally.
Place meatballs on vegetables in skillet.
Place chicken on top of meatballs.
Add enough water to cover meatballs only.
The chicken will steam.
Cover skillet; cook at least 1 hour.
You may want to simmer this longer.
When chicken is tender, the dish is done.
This can be prepared in the morning and reheated at mealtime.
