Perfect Porcupine Meatballs
|Egg||1 , beaten|
|Day old bread crumbs||1⁄2 Cup (8 tbs) (3/4 Slice)|
|Precooked rice||1⁄2 Cup (8 tbs) (Packages, Uncooked)|
|Freshly ground pepper||1 Dash|
|Ground beef||1 Pound|
|Canned tomatoes||7 1⁄2 Ounce, cut up (1 Can)|
|Hot water||1 Cup (16 tbs)|
|Basil sprigs/1/2 teaspoon dried basil leaves||1 , crushed|
Combine egg, milk, crumbs, rice, salt, and pepper; add ground beef and mix well.
Shape meat into about 20 small balls.
In heavy skillet brown in hot butter on all sides, turning gently. (Electric skillet 350°.)
Drain off excess fat.
Add tomatoes, water, and basil.
Cover and simmer until tender, about 45 minutes, turning once or twice.
