Saucy Spicy Turkey Meatballs

Ingredients
  Ground turkey 1 Pound
  Bread crumbs 1⁄3 Cup (5.33 tbs)
  Egg 1
  Garlic 1 Clove (5 gm), minced
  Grated fresh ginger 1 Teaspoon
  Red pepper flakes 1 Teaspoon, divided
  Light soy sauce 2 Tablespoon, divided
  Vegetable oil 1 Tablespoon
  Canned pineapple chunks 20 Ounce, undrained (1 Can)
  Cornstarch 1 Tablespoon
  Lemon juice/Orange juice 2 Tablespoon
  Honey 2 Tablespoon
  Red bell pepper 1 Large, seeded and cut into 1 inch triangles
  Hot cooked rice 1⁄2 Cup (8 tbs)
Directions

1. Combine turkey, bread crumbs, egg, garlic, ginger, 1/2 teaspoon red pepper flakes and 1 tablespoon soy sauce in large bowl. Shape turkey mixture into 1-inch meatballs.
2. Heat oil in wok or large skillet over medium-high heat. Add meatballs and cook 4 to 5 minutes or until no longer pink in centers, turning to brown all sides. Remove from wok.
3. Drain pineapple, reserving juice. Add enough water to juice to make 1 cup liquid.Whisk together pineapple juice mixture, cornstarch, lemon juice, honey, remaining 1 tablespoon soy sauce and 1/4 teaspoon red pepper flakes. Pour into wok. Cook and stir until sauce thickens.
4. Add meatballs, pineapple and bell pepper to sauce. Cook and stir until hot. Adjust seasoning with remaining 1/4 teaspoon red pepper flakes, if desired. Serve over rice.
