Sweet 'N' Sour Meatballs
|Ground chuck||1 Pound|
|Chopped onion||1⁄2 Cup (8 tbs)|
|Chopped onion||3⁄4 Cup (12 tbs)|
|Butter/Regular margarine||1 Tablespoon|
|Ketchup||1 Cup (16 tbs)|
|Brown sugar||2 Tablespoon (Packed)|
|Lemon juice||2 Tablespoon|
|Soy sauce||1 Tablespoon|
|Hot cooked rice||1 Cup (16 tbs)|
Combine ground chuck, egg, 1/4 c. onion, water, salt and pepper in bowl.
Mix lightly, but well.
Shape mixture into 24 meatballs.
Place meatballs in 12x8x2" (2qt.) glass baking dish.
Microwave at high setting 2 minutes.
Turn meatballs over and rearrange by moving outside meat balls to center of dish.
Microwave at high setting 2 minutes more, or until firm.
Pour off excess fat.
Cover with waxed paper and let stand on wooden board or heatproof surface while preparing sauce.
(Meatballs will complete cooking on standing.) Combine 3/4 c. onion and butter in 1 1/2qt. glass casserole.
Microwave at high setting 3 minutes, or until onion is tender.
Stir in ketchup, brown sugar, lemon juice and soy sauce.
Microwave at high setting 3 minutes, or until hot.
Pour sauce over meatballs and serve with hot rice.
