Ginger Meatballs

Ingredients
  Consomme 2 Can (20 oz)
  Gingersnaps 10 , crushed
  Packed brown sugar 4 Teaspoon
  Lemon juice 1 1⁄2 Teaspoon
  Ground beef 3 Pound
  Chopped onion To Taste (As Per Taste)
  Minced parsley To Taste (As Per Taste)
  Bread crumbs 1⁄2 Cup (8 tbs)
  Eggs 2
  Potato 1 Small, grated
  Salt To Taste
  Pepper To Taste
Directions

Combine consomme, gingersnaps, brown sugar and lemon juice in saucepan; simmer, stirring until smooth and blended.
Combine remaining ingredients; shape into small balls.
Drop into sauce; simmer, covered, for 30 minutes.
