Sweet & Sour Meatballs With Vegetables
|Ground turkey||1 Pound|
|Multi bran cereal||2 Cup (32 tbs), crushed to 3/4 cup (Chex Brand)|
|Chopped onion||1⁄4 Cup (4 tbs)|
|Egg/1/4 cup cholesterol-free egg product||1 , beaten|
|Chopped fresh parsley||2 Tablespoon|
|Garlic||1 Clove (5 gm), minced|
|Soy sauce||1 Teaspoon|
|Ground ginger||1⁄4 Teaspoon|
|Water||1⁄4 Cup (4 tbs)|
|Frozen oriental vegetables/Mixed vegetables, prepared according to package directions, drained||16 Ounce, prepared according to package directions, drained|
|Prepared sweet and sour sauce||1 Cup (16 tbs)|
In medium bowl combine turkey, cereal, onion, egg, parsley, garlic, soy sauce and ginger.
Using 1 rounded tablespoon meat mixture for each, shape into 2-inch balls.
Brown meatballs in lightly greased skillet over medium heat, turning often.
Add water; cover and cook over low heat 8 to 10 minutes or until no longer pink, stirring occasionally.
Add vegetables and sweet and sour sauce; cook over low heat, stirring gently until meatballs are coated and sauce and vegetables are warm.
Serve over rice, if desired
