Duchess Meat Balls
|Ground beef||1 Pound|
|Milk||1⁄4 Cup (4 tbs)|
|Soft bread crumbs||1⁄2 Cup (8 tbs)|
|Chopped pecans||1⁄2 Cup (8 tbs)|
|Chopped parsley||2 Tablespoon|
|Condensed tomato soup||10 3⁄4 Ounce (1 can)|
|Seasoned hot mashed potatoes||1 Cup (16 tbs) (adjust quantity as needed)|
1. Mix ground beef lightly with egg, milk, bread crumbs, pecans, parsley, salt and pepper until well-blended; shape into 24 balls.
2. Brown in butter or margarine in a large frying pan; stir in tomato soup; cover.
3. Simmer, stirring several times, 10 minutes to blend flavors.
4. Spoon seasoned hot mashed potatoes in a ring on a serving plate; spoon meat balls and sauce in center.
