Peanut Chicken Meatballs

Ingredients
  Ground cooked chicken/Turkey 2 1⁄2 Cup (40 tbs)
  Grated carrot 1⁄2 Cup (8 tbs)
  Chopped parsley 1⁄2 Cup (8 tbs)
  Chopped scallions 1⁄2 Cup (8 tbs)
  Homemade mayonnaise 3⁄4 Cup (12 tbs)
  Ground nuts 1 Cup (16 tbs) (Walnuts, Peanuts, Pecans/ Cashews)
  Butter 1⁄4 Cup (4 tbs), melted
Directions

1. In a medium-sized bowl combine the chicken, carrot, parsley, scallions, and mayonnaise. Mix well and form into 1-inch balls.
2. Roll the balls in the nuts, then on one side in the butter, and place butter side up on a baking sheet. Bake in a 400-degree oven for 15 minutes or until the meatballs are golden.
