Peanut Chicken Meatballs
|Ground cooked chicken/Turkey||2 1⁄2 Cup (40 tbs)|
|Grated carrot||1⁄2 Cup (8 tbs)|
|Chopped parsley||1⁄2 Cup (8 tbs)|
|Chopped scallions||1⁄2 Cup (8 tbs)|
|Homemade mayonnaise||3⁄4 Cup (12 tbs)|
|Ground nuts||1 Cup (16 tbs) (Walnuts, Peanuts, Pecans/ Cashews)|
|Butter||1⁄4 Cup (4 tbs), melted|
1. In a medium-sized bowl combine the chicken, carrot, parsley, scallions, and mayonnaise. Mix well and form into 1-inch balls.
2. Roll the balls in the nuts, then on one side in the butter, and place butter side up on a baking sheet. Bake in a 400-degree oven for 15 minutes or until the meatballs are golden.
