Lemony Lamb Meatballs

  Lean ground lamb 1 1⁄2 Pound
  Unsalted crackers 1⁄2 Cup (8 tbs), crumbled
  Whole egg 1
  Dried basil 1 Teaspoon
  Water 2 Cup (32 tbs)
  Beef broth cubes 2
  Cornstarch 1 Tablespoon
  Cold water 2 Tablespoon
  Lemon juice 3 Tablespoon

In a bowl, mix ground lamb, cracker crumbs, egg, salt, pepper and basil.
Shape into 1 inch (2.5 cm) meatballs.
Set aside.
In a casserole dish, bring water to a boil.
Dissolve beef broth cubes.
Add meatballs.
Cook 15 minutes.
Remove meatballs.
Keep warm.
Meanwhile, dilute corn starch in cold water.
Add to lamb cooking broth.
Bring to a boil.
Cook 5 minutes.
Fold in lemon juice.
Pour over meatballs.
