Baked Vegan Meatballs

Great alternative to meatballs for vegans.. this is an Indian style Kofta made wit rice and lentils. Its flavourful, healthy, baked instead of fried and nutritious. Use these balls in a curry, put them in a wrap or simply enjoy as a snack with your favourite chutney.

Ingredients

Brown lentils 2 Cup (32 tbs) , boil
Brown rice 1 Cup (16 tbs)
Flax seed powder 3 Tablespoon
Bread crumbs 1/2 Cup (8 tbs)
Grated ginger 1 Tablespoon
Chopped cilantro leaves 1/3 Cup (5.33 tbs)
Green chili 1 Small , deseeded
Onion 1 Small , chopped
Curry powder 2 Teaspoon
Salt To Taste
Red chili powder 1/2 Teaspoon
Mango powder 1 Teaspoon
Cumin powder 3/4 Teaspoon

Directions

MAKING

1. In a bowl, mix all the ingredients.

2. Form even sized balls and bake at 375 F for 20-30 minutes.

SERVING

3. Serve in a curry or along with your favourite chutney.
