On this tailgating episode we take an all time favorite and wrap it in a meatball. This Buffalo Chicken Meatball is bursting with flavor. It is easy to make and perfect for you tailgating party. Just add beer.

For the chicken meatballs | ||
Red onion | 1 Small , minced | |
Garlic | 3 Clove (15 gm) , minced | |
Egg white | 1 | |
Parmesan cheese | 1/4 Cup (4 tbs) , grated | |
Panko bread crumbs | 1/4 Cup (4 tbs) | |
Dried parsley | 1 Tablespoon | |
Salt | 1/2 Teaspoon | |
Garlic powder | 1/2 Teaspoon | |
Onion powder | 1/2 Teaspoon | |
Dried dill | 1/4 Teaspoon | |
Dried basil | 1/4 Teaspoon | |
Pepper | 1/4 Teaspoon | |
Ground chicken breast | 1 Pound | |
Bleu cheese | 1/4 Cup (4 tbs) (cubed) | |
For the buffalo sauce | ||
Butter | 1/4 Cup (4 tbs) | |
Hot chicken wing sauce | 1/4 Cup (4 tbs) |
GETTING READY
Preheat the grill to 250 degrees.
MAKING
For the meatballs – in a large bowl, add in all the ingredients, except the bleu cheese and mix well.
Make small balls from the mixture and stuff with bleu cheese cubes.
Place in an aluminum foil dish and grill for 40 minutes.
For the sauce – in a saucepan, add in the butter and chicken wing sauce. Bring to a simmer boil and pour over the meatballs. Cook for another 10 minutes.
SERVING
Serve with some beer.
