Braised Brains

Ingredients
  Calf's brains 1
  Flour/Cracker crumbs 1 Cup (16 tbs)
  Fat 1 Tablespoon
  Salt To Taste
  Pepper To Taste
Directions

Soak brains in cold water for 30 minutes.
Remove veins and membrane.
Season, roll in flour or crumbs, brown in fat and cover skillet tightly.
Cook slowly about 20 minutes.
