Potted Pigeons

Ingredients
  Pigeons 6
  Bacon slices 3
  Carrot 1 , diced
  Onion 1 , diced
  Parsley 1 Teaspoon, minced
  Hot water/Hot stock 4 Cup (64 tbs)
  Fat 1⁄4 Cup (4 tbs), melted
  Flour 1⁄4 Cup (4 tbs)
  Buttered toast 1 (As Required)
Directions

GETTING READY
1.Start by cleaning and dressing the pigeons
MAKING
2.Now take the pigeons and stuff, truss and place upright in pan upon slices of bacon
3.Add carrot, onion, and parsley, and cover with boiling water or stock
4.Cover pot closely and simmer from 2 to 3 hours, or until tender, adding boiling water or stock when necessary
5.Combine fat and flour and add to 2 cups of stock remaining in pan
SERVING
6.Serve with vegetables or a sauce of your choice
