Bison Burger

How to make a bison burger and two other great recipes with bison.
Ingredients
For bison burger
  Ground bison 2 Pound
  Worcestershire 2 Tablespoon
  Pepper sauce To Taste
  Granulated garlic 1⁄2 Teaspoon
  Sea salt To Taste
  Black pepper To Taste, cracked
  Olive oil 2 Tablespoon
For the bison filet mignon
  Bison filet 200 Gram (2 filet)
  Olive oil 1 Tablespoon
  Granulated garlic To Taste
  Balsamic vinegar 3⁄4 Cup (12 tbs)
  Sugar 1⁄4 Cup (4 tbs)
  Peach 1 , pitted and halved
  Safflower oil 1 Teaspoon
  Honey 1 Teaspoon
For the bison ny strip steak
  Bison ny strip steaks 200 Gram
For sauce
  Red onions 2 Medium, thinly sliced
  Extra virgin olive oil 2 Tablespoon
  Granulated garlic 1 Teaspoon
  Sea salt 1 Teaspoon
  Black pepper 1⁄2 Teaspoon, cracked
  Green apple 1 , chopped
Directions

For Bison Burgers
GETTING READY
1. Preheat the grill pan at medium heat.

MAKING
2. In a large bowl, combine the ground bison with the Worcestershire sauce, pepper sauce, granulated garlic, sea salt, and black pepper.
3. Shape the mixture into four, 3/4-inch patties.
4. Lightly brush the outsides of the patties with olive oil to prevent sticking.
5. Place the patties on a preheated grill pan over medium high heat. Cook for 4 minutes on each side.

SERVING
6. Serve Bison Burger with fresh tomatoes and onion.

For Grilled Bison Filet Mignon
GETTING READY
1. Preheat the grill pan at medium heat.

MAKING
2. Lightly brush the outsides of the filets with olive oil and season with sea salt, cracked black pepper, and granulated garlic.
3. Cook on a preheated grill pan over medium high heat. Grill each filet for 10 to 14 minutes, turning once for medium rare.
4. For Sauce - In a hot saucepan combine the balsamic vinegar with the sugar.
5. Cook over medium heat until the balsamic mixture reduces by half, stirring frequently for 15 minutes.
6. Brush peach with safflower oil. Place on the grill, flesh side down. Cook for 3-5 minutes to char.

SERVING
7. Drizzle balsamic vinegar reduction and honey over the peach. Serve with the fillets.

For Bison NY Strip Steak
GETTING READY
1. Preheat the grill pan at medium heat.

MAKING
2. Lightly brush the outsides of the steaks with olive oil and season with sea salt, cracked black pepper, and granulated garlic.
3. Cook on a preheated grill pan over medium high heat. Grill each filet for 10 to 14 minutes, turning once for medium rare.
4. For Sauce – in a sauté pan add in the extra virgin olive oil, onions, granulated garlic, sea salt and cracked black pepper.
5. Cook on medium to medium-low heat, stirring occasionally until the onions reduce to half.

SERVING
6. Serve onion sauce over the strip steaks.

Thanks for these bison 3 recipes. However the video does not seem to be working for me. I have seen the written method and it does look like a really spicy dish. Here, we hardly have bison. Is it easily digested ? Its supposed to be tough meat right? ...no offense , just curiosity :D
