Dixie Dandy Bake

Dixie Dandy Bake is a unique dish that is a meal in itself. You can serve this wonderful dish at home for a grand dinner. I made this for my husband for our anniversary dinner and he loved it! Try the Dixie Dandy Bake for yourself!
Ingredients
  Canned applesauce 1 Pound
  Ginger 1⁄4 Teaspoon
  Canned luncheon meat 24 Ounce
  Canned pineapple slices 8 Ounce
  Sweet potatoes 1 Can (10 oz)
  Apricot jam 1⁄2 Cup (8 tbs)
  Dry mustard 1⁄2 Teaspoon
  Salt 1⁄4 Teaspoon
  Water 1 Tablespoon
Directions

Combine applesauce and ginger; spread in 10x6x11/2 inch baking dish.
Slice each loaf of luncheon meat 3 times on the diagonal, cutting only 3/4 of the way through.
Halve pineapple slices; insert in cuts in meat.
Place meat atop applesauce; arrange sweet potatoes around meat.
Combine remaining ingredients.
Spread over meat, pineapple, and potatoes.
Bake at 400° for 35 to 40 minutes.
