Trim chops of excess fat.
Heat grill until red hot and place chops on oiled rack 2-inches below the heat.
Grill 1 minute on each side, then a further 5-7 minutes on each side, turning with tongs or two spoons.
Season with salt and pepper and serve immediately with a pat of Parsley Butter on each chop for added flavor.
