Effortless Entrees Part 1 - Cajun Pot Roast
|Boneless chuck roast||2 Pound|
|Cajun seasoning||5 Tablespoon|
|Beer||1 Bottle (1 l) (Any Variety)|
|Canned tomatoes||15 Ounce, diced|
|Onion||1 Medium, diced|
|Boneless chicken breasts||1 1⁄2 Pound, cut into 1 inch chunks|
|Roasted garlic oil||1 Tablespoon|
|Seasoning||2 Tablespoon (Tuscan Fantasy)|
|Red bell pepper||1 , cut into 1 inch chunks|
|Green bell pepper||1 , cut into 1 inch chunks|
|Button mushrooms||8 Ounce|
Cajun Pot Roast:
Medium-high heat the frying pan.
Add garlic oil to the pan.
Rub the roast with cajun seasoning on both seasoning.
When the pan is smoking hot, place the roast in it and sear for 2 minutes on each side.
Place it in the crock pot when done.
In a large bowl, combine remaining ingredients.
Pour over roast and put the lid on the crock pot.
Cook for 8 hours on low.
Serve with corn bread muffins and a green salad.
Tuscan Fantasy Chicken Kebab:
Preheat outdoor grill to medium-high heat.
In a large bowl, combine oil, meat, and vegetables and toss to coat.
Sprinkle seasoning liberally over mixture and toss once again.
Thread alternating meat and vegetable pieces on a skewer.
Repeat the process with all the ingredients.
Place kebabs on the grill and cook, 5-7 minutes on each side, or until chicken is thoroughly cooked.
Serve warm over rice.
