Granny'S Veal Kidney
|Streaky bacon||5 Ounce|
|Green olives||5 Ounce|
Fry 1 finely sliced veal kidney and the chopped bacon in butter till golden, moisten with hot stock, add the onions, the mushrooms, coarsely chopped, the potatoes cut into little balls if possibleâ€”a special knife exists for thisâ€”and finally the green olives, stoned.
Leave to simmer until everything is cooked and the sauce almost entirely reduced.
