Egg A La Tripe
|Hard boiled eggs||6|
|White sauce||1⁄2 Pint|
|Chopped parsley||2 Tablespoon|
1. Cut the eggs into slices.
2. Peel and slice onions and saute" in the butter until soft and lightly coloured.
3. Make the white sauce, add salt and pepper.
4. Add the eggs and onions.
5. Pour into a serving dish and serve hot sprinkled with chopped parsley or a little red pepper.
