Marinade For Venison, Elk Or Antelope

Ingredients
  Beef broth 1 Cup (16 tbs)
  Salt 1 Teaspoon
  Pickling spice 1 Tablespoon
  Celery seeds 1⁄2 Teaspoon
  Basil 1⁄2 Teaspoon
  Marjoram 1⁄2 Teaspoon
  Thyme 1⁄2 Teaspoon
  Sage 1⁄2 Teaspoon
  Bay leaf 1
  Peppercorns 3 , crushed
  Whole allspice 3 , crushed
  Lemon juice 2 Tablespoon
  Vinegar 1⁄4 Cup (4 tbs)
Directions

MAKING
1) In a large bowl, combine all of the ingredients.
2) As required, cover venison, elk or antelope with the marinade.
3) Marinate in the refrigerator for 10 to 12 hours.
4) Remove the meat from the marinade and drain well.

SERVING
5) Use as required.
