Ingredients
  Salt To Taste
  Pepper To Taste
  Veal kidneys 6
  Butter 3 Tablespoon
  Garlic 1 Clove (5 gm)
  Onion 2 Medium, thinly sliced
  Mushrooms 1 Pound, cleaned and sliced
  Flour 3 Tablespoon
  Celery 1 , cut
  Rosemary 1⁄4 Teaspoon
  Celery 1 Cup (16 tbs)
  Stock 1 Cup (16 tbs)
  Toast 1
Directions

MAKING
1) Using a sharp knife, slit and cut the kidneys and remove any skin and tissue
2) Soak them in a bowl of water for about 1/ 2 hour
3) Preheat the oven to 350F
4) Cut the kidneys into ½ inch slices and in a frying pan, melt some butter and sauté them along with a garlic for about 5minutes
5) Using a slotted spoon, take out the kidneys and discard the garlic
6) Sauté the onions and mushrooms in the remaining butter till tender
7) Sprinkle in flour and blend well
8) Tip the kidneys back in and mix well
9) In a greased 2 ½ quart greased casserole, spoon in the kidney mixture
10) Add the celery, rosemary, claret and stock
11) Cover the casserole with a lid and bake for 20 minutes at 350F
12) Take off the cover and bake for 10 minutes more, with some salt and pepper added

SERVING
13) Serve warm on some buttered toast
